About the Role

As a Culinary Operations Manager at Park Hyatt Ningbo, you will be responsible for ensuring that guests are offered a variety of food items prepared with fresh products whenever possible.

The successful candidate will have experience in managing kitchen operations, supervising cooking and other kitchen personnel, and coordinating their assignments to ensure economical and timely food production.

You will be required to observe methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure that food is prepared in the prescribed manner.

In addition, you will be expected to test cooked food before plate-up and service, and ensure the cleanliness of all kitchen equipment.

This role requires someone who is proactive, organized, and able to work well under pressure. You will be working closely with the Outlet Chef de Cuisine to learn and prepare new products as directed.

Key Responsibilities

  1. Use fresh products whenever possible to ensure guests are offered a variety of food items.
  2. Ensure food surpluses and leftovers are used according to the set guidelines and policies.
  3. Cook and ensure foods are prepared according to the menus and recipes, ensuring the quality of food meets the Hyatt Hotels Corporation standards.
  4. Strictly adhere to food apportionment policy to effectively control costs.
  5. Take interest in learning and preparing new products as directed by the Outlet Chef de Cuisine.
  6. Serve fresh food to guests which is prepared a la minute, consistent in quality, and reflects the style of the outlet concept.
  7. Supervise cooking and other kitchen personnel and coordinate their assignments to ensure economical and timely food production.
  8. OBSERVE methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
  9. Test cooked food before plate-up and service.
  10. Ensure the cleanliness of all kitchen equipment.
  11. Ensure all Commis Chefs and Kitchen Apprentices use the right tool for the right job.
  12. Ensure all Commis Chefs and Kitchen Apprentices handle the food-preparing machine in a proper and safe manner.
  13. Ensure the cleanliness of the work areas at all time.
  14. Strictly adhere to the food safety management system requirements, accord with the hotel and local government requirements in daily operations.

The salary range for this position is CNY 150,000 - CNY 200,000 per annum, depending on experience.
